Cuco's is family owned and operated by a local Vienna family. Chef Keelan grew up here, went to high school at Madison, and has spent his career cooking in the area. His partner Claudia was born in Peru and graduated from George Mason. Claudia's knowledge of authentic Peruvian flavors and Keelan's understanding of the local industry and culinary landscape combine to bring the most authentic pollo a la brasa in the DMV. Since opening in 2025, we've built our kitchen around coal-fire cooking, fresh local ingredients, and recipes that don't cut corners — because good tradition and fast service were never meant to be opposites. Every chicken is marinated in-house, every sauce made from scratch, every plate meant to feel like more than fast food.
